Tuna salad This tuna salad is my go to when I’m in a rush and I need something simple and delicious and on the healthyish side. ——Ingredients—— 2 cans white tuna 1 tomato diced 1u002F2 small red onion diced 1 Persian cucumber diced 1 jalapeño diced (take out the seeds) 1 pickle diced 1u002F4 cup chopped parsley The juice of 1 lemon 1u002F3 cup mayonnaise or less 1 heaping tablespoon stone ground mustard 1u002F2 teaspoon Black pepper or to taste 1u002F2 teaspoon Salt or to taste : 1. 2 cans of white tuna in water or oil, if it’s in water drain the tuna. 2. Dice all the veggies, then combine everything together in a bowl Mix and enjoy over lettuce, mixed greens or in a sandwich.
