Pickle Salsa 🥒 I saw @Freddsters make this a couple weeks ago and OH MY GOSH….if you love pickles PLEASE make this. Here’s how: 1-2 tbsp olive oil @California Olive Ranch 8-10 tomatillos 3 jalapeños (use four if not using serrano) 1 serrano (optional) 1 onion, quartered 3 cloves garlic, unpeeled 1 bunch cilantro Juice from 1u002F2 lime (to taste) 1, 32oz container of @Grillo’s Pickles (drained, but reserve the juice) 1u002F4 - 1u002F2 cup pickle juice, to taste Tortilla chips, for serving 1. In a large skillet, heat 1–2 tbsp olive oil over medium-high heat. Once hot, add the tomatillos, jalapeños, serrano (if using), onion, and unpeeled garlic cloves. 2. Char everything for about 10 minutes, flipping occasionally so all sides get blistered and golden. The more color, the deeper the flavor. 3. Let the veggies cool slightly, then peel the garlic and transfer everything to a blender. 4. Add the juice of 1u002F2 lime, 1 bunch of cilantro, drained Grillo’s pickles, and 1u002F4–1u002F2 cup pickle juice. Pulse until smooth or chunky, however you like it. Taste and adjust with lime if needed. 5. Serve with tortilla chips and enjoy right away, or chill for even more flavor. Enjoy!
